Shui Xian is an exceptional cultivar known for its remarkable versatility. In addition to a wide range of Oolong teas, it is also extensively processed into black tea, white tea, green tea, and, in certain regions, is even used to produce yellow and dark tea. This Shui Xian Hong serves as an excellent example of Hong Cha (black tea) crafted from the versatile Shui Xian cultivar.

 

Zhang Ping Shui Xian has been the only conventionally compressed Oolong variety since the 1930s. Recently, with the introduction of black tea processing techniques in Zhang Ping area, a new member has emerged in the Zhang Ping Shui Xian family – a black tea version. This Shui Xian Hong is produced in the same factory as our popular Zhang Ping Shui Xian Oolong Tea. Unlike the few similar products from other factories in the same region, it undergoes charcoal roasting processes, following the Oolong tradition, which imparts a smoother mouthfeel to the tea. Furthermore, after being compressed into blocks and going through the initial low-temperature roasting, it undergoes a second fermentation, contributing to a much deeper flavor in the tea. This Zhang Ping Shui Xian black tea version remains a fragrant tea, although its aroma is quite distinct from the oolong version, leaning more toward fruity than floral. Above all, it unmistakably exhibits the typical characteristics of the cultivar, making it instantly recognizable as Shui Xian from the very first sip.

    Quick rinse, 10-15s in the first infusion, 8-12s from the second, increase the steeping time by a few seconds in each infusion since the 7th or 8th infusion.

     

    High temperature helps to activate aromas, shorten steeping time since the beginning if brewed at higher temperatures over 90ºC.
