We may offer products in up to three different grades each year, mostly crafted from spring harvest, while autumn harvest will be specified as “AUT”. All the available options present clear floral notes, without the need for an extremely sharp sense of smell, and you can easily detect aromas of orchid, Osmanthus, narcissus etc., as well as the pronounced sweetness found in both the aroma and the flavor.
 
Special Offer: High-quality daily drinking level (listed as SO)
This product is processed using the traditional method, exactly the same as the other grades, but it is harvested later, typically in early May each year, or on specific days in the case of an autumn tea when a similar flavor profile is achieved. It is characterized by very rich taste and some powerful scents that linger. Due to the higher temperature in late spring, the harvest contains more polyphenols, resulting in a stronger flavor but not as fine and smooth as the other options. Also, the relatively mature harvest with buds imparts a touch of bitterness that quickly fades away, leaving a sweet aftertaste.
 
Classic: Fine-selected tasting level (listed as C)
This finely selected traditional product is harvested in April, a few days later than the Classic Gourmet grade, or on specific days in the case of an autumn tea. It is elegant and tasty, devoid of any bitterness or astringency, and boasts an intense and penetrating fragrance that surpasses even the Classic Gourmet.
 
Classic Gourmet: The highest grade (listed as CG)
The finest traditional Zhang Ping Shui Xian, carefully hand-picked only around April 21 each year, during the best harvesting period in spring. This is an exquisite tea, marked by an outstanding balance and extreme elegance, delivering an exceptional texture in the silky liquor, delicate sweetness, a delightful floral scent, accompanied by subtle fruity and woody undertones, and without any hint of abruptness.

Zhang Ping Shui Xian is a distinctive tea from Zhang Ping, a city in the southwestern Fujian province. It has received geographical indication protection since 2009 and is notable for being the only Oolong tea that incorporates compression as a standard step in its production. The history of tea cultivation in Zhang Ping can be traced back to the Yuan Dynasty (13th-14th centuries). In 1914, the Shui Xian varietal was introduced to the region, and since then, this unique tea, compressed into blocks using wooden molds, was finally developed in the 1930s.
 
Presently, the local government has established an organic tea base to ensure pollution-free production. This process has undergone rigorous quality testing by the provincial tea quality inspection center and the national inspection center of the Ministry of Agriculture. The test results confirm that none of the teas from the city contain pesticide residues exceeding allowable limits.
 
All of our Zhang Ping Shui Xian products proudly come from the same factory, which provides standard samples to the Tea Institute of the Chinese Academy of Agricultural Sciences for didactical and research purposes.
